House made traditional corn tortillas, filled with Mexican spiced cauliflower and walnut mince, fresh pineapple and green chilli salsa (mild) guacamole and purple cabbage charred corn slaw. A Mexican fiesta for your taste buds.
Heat a large fry pan over a medium heat, place a few tortillas in at a time spritz with a little water to soften and warm through then wrap in a clean tea towel to keep warm and soft. When all the tortillas have been warmed, place cauliflower walnut mince into the same pan, tossing to heat through. Pour in cauliflower and walnut mince, toss to warm through. Place warmed cauliflower mince, Tortillas, Purple Slaw, Guacamole and pineapple salsa into bowls at the table for everybody to build their own, taco fiesta!
