Fragrant Thai fish cakes pan seared until golden, served over a bed of organic udon noodle salad, tossed with edamame, purple cabbage, carrot, cucumber, coriander and spring onion. Finished with a light umami peanut ginger dressing. Heaven.

Instructions: 

Heat a frypan over a medium heat. Add a drizzle of oil. When pan is hot, add fish cakes for 2-3 minutes each side until cooked through in the centre. To serve, place udon noddle salad into bowls dress with peanut dressing, top with fish cakes and enjoy.

 

Ingredients:
Local whiting fillets, udon noodles, edamame, Red Cabbage, Carrot, cucumber, Coriander, Spring onion. Dressing: peanut nut butter, rice vinegar, sesame oil, Lime, Tamari, Coconut Aminos, Ginger, Garlic, Chilli.
