Tender Baked Organic chicken drumsticks in a delicious peanut satay sauce, served over a bed of seasonal vegetable fried rice.

Instructions: 

Preheat Oven to 180 degrees, Place contents of marinated satay chicken along with marinade into a baking dish, bake for 40 minutes or until cooked through. Heat a large frypan over a medium heat, add a drizzle of coconut oil, place sliced spring onions and ginger into pan and stir fry for 2 minutes, add in the sliced vegetables and stir fry for a further 2 minutes, add in cooked rice and if needed a little extra oil to prevent it from sticking, toss and stir fry for 3 minutes, if desired add a splash of tamari, stir through and turn off heat. To serve place rice onto serving plates, top with satay chicken and some sauce and a sprinkle of coriander, enjoy.

Organic chicken drumsticks, jasmin rice, chinese cabbage, Carrot, peas, broccoli, Corinader, Spring onion. Satay sauce: peanut butter, coconut milk, chicken broth, Lemongrass, Kaffir lime leaf, curry powder, Lime, Tamari, Tamarind, Coconut Sugar, Ginger, Garlic, Chilli.
