A delicious take on traditional potato gnocchi, this cauliflower gnocchi is light, crisp, moorish and gluten free! Combined with seared cherry tomatoes, rocket and zesty kale pesto it will keep your tastebuds satisfied and your tummy nourished.

 

Instructions:

Heat a frypan over a medium heat, add a drizzle of olive oil. When pan is hot place Gnocchi in batches. Sear until golden and crisp on each side, turning gently. In last 3 minutes of cooking add in cherry tomatoes, cook for 3 minutes.  Add a splash of water and the contents of the pesto to the pan and stir to combine and warm the pesto through, turn off heat and stir through rocket leaves. Serve in bowls topped with parmesan cheese (optional)
