Irresistible spiced eggplant Kofta (mild) pan seared until golden and caramelised, served with locally grown sweet potato wedges, crisp greek mint salad. All tied together with a delicious smashed pea, lemon, mint, feta and pomegranite dip. The perfect combination of middle eastern flavours.

Instructions:

Preheat oven to 180°C. On a lined baking dish, place Wedges in oven for about 5-7 mins. Heat a fry pan on high with a drizzle of Olive Oil. When the pan is hot, add the Eggplant Kofta. Cook until browned on all sides and cooked through to the centre, (approx 3 -4 minutes per side). To assemble; divide Wedges amongst serving bowls, arrange Eggplant Kofta, dressed Mint Salad and serve with Pea Dip.
