Instructions:

Heat a fry pan over a medium heat. Add a drizzle of olive oil. When pan is hot, add Barramundi fillets, skin side down. Cook fish for 5-8 minutes until skin is golden and crispy. Turn fillets over and cook for a further 5 minutes or until cooked through. While fish is cooking heat the Mash in a saucepan over a medium heat, stirring until piping hot. Warm Fennel Salsa in a pan on low. Once the fish is cooked wipe out the pan and toss the blanched vegetables into the pan to heat through. To serve spoon the mash onto serving plates, top with Barramundi, Salsa and a side of greens.
