Instructions:

Heat oven to 180°C. Place Potatoes on a tray lined with baking paper, warm in oven for 5-7 minutes. Add a drizzle of olive oil to a frypan over medium high heat. Place Barramundi fillets in skin side down, cook for 5 minutes until skin is golden and crispy, turn over and cook for a further 5 minutes until cooked through. Serve Barramundi with Duo of Hassel back Potatoes drizzled with salmoriglio and a side of dressed salad.
