Cajun spiced barramundi fillets cooked until golden and crispy skinned.

Served with a southern inspired sweet potato, charred corn, avocado, red capsicum and coriander salad, drizzled with a creamy smoked lime dressing.

Instructions:

Heat oven to 180°C. Place sweet potato wedges on a tray lined with baking paper, warm in oven for 5-7 minutes.

Add a drizzle of olive oil to a frypan over medium high heat. Place Barramundi fillets in skin side down, cook for 5 minutes until skin is golden and crispy, turn over and cook for a further 5 minutes until cooked through.

Layer the warm sweet potato wedged with the salad and sliced avocado on a platter, drizzle with dressing and serve alongside the cajun fish fillets.
